I have a question about a vampires eyes in underworld...?

I love that their eyes go all pale blue....but most of actors playing vampires have brown eyes or are wearing dark contacts....what if there is a vampire with already blue eyes....what happens when she gets mad and her eyes change...how would tell the difference?...
